  1. 0:00Hi everyone, welcome to Souped Up Recipes.
  2. 0:04I am Mandy. Today we are making tomato egg noodle soup.
  3. 0:08It is one of our go-to dinner recipes when  we want something quick, easy and delicious.
  4. 0:15Unlike other Chinese dishes, this  doesn’t require any special ingredients.
  5. 0:22You probably have everything  in your kitchen already.
  6. 0:25So, let’s get started.
  7. 0:27Crack three eggs into a bowl and beat them  well until you don’t see any obvious egg white.
  8. 0:33Usually, I use 1 egg per person but you can  definitely make more depending on your appetite.
  9. 0:40Dice 3 tomatoes. If you have  time, you can remove the skin.
  10. 0:46If you don’t have time, just leave it.
  11. 0:50Turn the heat to high, and add  some cooking oil (2 tbsp) to a wok.
  12. 0:55Swirl it around to create a non-stick layer.
  13. 0:59Pour in the eggs. Give it some time to let it set.
  14. 1:05Turn off the heat. Break the egg into chunks by using your spatula.
  15. 1:14Remove the egg and set it aside.
  16. 1:17Drizzle in 1 more tbsp of oil. Add the diced tomato,
  17. 1:231 tbsp of minced garlic, and 2 tbsp of tomato paste.
  18. 1:30Stir until the tomato paste is dissolved.
  19. 1:37Season it with 1 tsp of sugar and 1/2 tsp of salt. Keep stirring over low heat for a few minutes or
  20. 1:47until the tomato is soft and there is a  lot of juice pulling out at the bottom.
  21. 1:53Pour in 4 cups of chicken stock.
  22. 1:56This is store-bought.
  23. 1:58You can also use water.
  24. 2:00When I was little, we always use  water so nothing is wrong with that.
  25. 2:06Bring it to a simmer.
  26. 2:08Then we will add the noodles.
  27. 2:10What I am using are these fresh ramen noodles.
  28. 2:14This recipe is not limited by the types of  noodles so use whatever you have in your pantry.
  29. 2:21You can definitely cook the noodles  in a separate pot and then transfer
  30. 2:26it into the wok, so it doesn’t thicken your soup.
  31. 2:30I actually prefer my noodle  soup to be thick and creamy.
  32. 2:35That’s why I am cooking it in the wok directly.
  33. 2:38The cooking time depends on the  type and thickness of your noodles.
  34. 2:43If you are not sure, read the instructions  on the package before you cook them.
  35. 2:49While waiting for the noodles to cook, you can  quickly cut up some green leafy vegetables.
  36. 2:56I use baby bok choy.
  37. 2:58When the noodles are almost  done, throw in the baby bok choy.
  38. 3:03Put the egg back into the wok.
  39. 3:08Give it a taste. The store bought  chicken stock that I used is low sodium.
  40. 3:14So I just need 1 tbsp of soy sauce.
  41. 3:17And it will be perfect.
  42. 3:20If you are using unsalted stock,  you will to add a little more salt.
  43. 3:25Now we are ready to serve.
  44. 3:29Optionally, I like to top with a  couple cloves of soy pickled garlic.
  45. 3:35It is homemade. You just put the  garlic and soy sauce into a mason jar
  46. 3:40and let it ferment for 2 weeks.
  47. 3:43You can also use other kinds  of pickles that you have.
  48. 3:47As the first kid in my family, I had  to take care of my 2 little sisters.
  49. 3:54This is the most often breakfast that I  cook in the morning before going to school.
  50. 4:00It can also be a quick dinner as  it is very hearty and healthy.
  51. 4:06Despite the simple ingredients, The combination  is incredible - so flavorful and savory.
