1. 0:00Some days you just really fancy a beautiful meatball dish. We're doing it
2. 0:04with this incredible pappardelle. So we're making this pappardelle every
3. 0:07single day from organic eggs, semolina, tipo 00 flour, and look at
4. 0:12it. Look at the shape, it's funky! And in the old days we used to extrude the
5. 0:17pappardelle, we used to kind of break one side to make those little kind of frills,
6. 0:21and of course the frills, they grab all the sauce. So we're gonna cook this
7. 0:26off. The fresh pasta only takes a couple of minutes to cook, and here I've got
8. 0:32some beautiful meatballs. Have a little look at these. Here's some really nice
9. 0:38meatballs with beautiful pork and nduja, which is a really famous soft salumi.
10. 0:44And here is some Calabrian chili with the most amazing oil. Look at the colour of
11. 0:48that oil. And we source that, and the thing about the Calabrian chili's is it
12. 0:53is warm, but there's a sweetness and a fruit to it that I just absolutely love.
13. 0:58So as the pasta cooks, we'll brown off those meatballs and then we'll break it
14. 1:04with some beautiful passata, which is a garlic, basil, tomato sauce. You want to
15. 1:09get some nice colour on there. The herb we're going to use is some parsley.
16. 1:15It''s nice and fresh. Super good. Look, so look at these balls. Look at the colour
17. 1:25and look at the chili. Now we go in with the passata, we hit it with the parsley,
18. 1:32and then we have the pasta here, and I maybe nick a little bit of that cooking
19. 1:38water. Just really nice to agitate the pan. Look at the way that the pasta just
20. 1:45holds on to the sauce. So good, so so good. Gorgeous. Wonderful, wonderful flavourings
21. 1:54in there. Look at that shape. I just love that pasta. Meatball pasta just
22. 1:59makes me really happy. Sometimes I just feel like it. It's one of those things, it's
23. 2:02an ultimate comfort food. Such a wonderful wonderful indulgence.
24. 2:08Some wonderful parmesan. That is one of my favourites. Beautiful nduja
25. 2:16meatballs, with that fantastic pappardelle, sweet tomato sauce, and those
26. 2:22amazing Calabrian chilies. Happy days. Come on!
