  2. 0:09we're gonna cut straight to the chase
  3. 0:11should you store your coffee in the
  4. 0:13freezer maybe let's get into this in a
  5. 0:18little bit more detail talk about when
  6. 0:19it's good to use the freezer to store
  7. 0:21coffee and ready when it's not to start
  8. 0:24with let's talk about why you might want
  9. 0:26to store your coffee in the freezer very
  10. 0:28cold temperatures are great at slowing
  11. 0:30certain kinds of reactions involved in
  12. 0:32things going stale freezer temperatures
  13. 0:34slow down oxidation they prevent the
  14. 0:36loss of volatile aromatic compounds they
  15. 0:39just generally slow the staling process
  16. 0:40now most domestic freezers don't go cold
  17. 0:43enough to completely stop that process I
  18. 0:46think the research done by a sort of
  19. 0:48famed coffee scientist engineer roaster
  20. 0:51builder Mike civets said that you needed
  21. 0:53to store coffee at minus 40 that magical
  22. 0:57temperature where it doesn't matter what
  23. 0:59units you're talking about anyway most
  24. 1:01domestic freezers live at about minus 20
  25. 1:03degrees Celsius that's good enough to
  26. 1:05help slow the process quite dramatically
  27. 1:08freezers however have a problem they are
  28. 1:11incredibly dry places and those kind of
  29. 1:14temperatures Moisture can't stay in the
  30. 1:16air it comes out of the air and forms
  31. 1:18ice crystals if you've ever owned a
  32. 1:20freezer you love seeing that happen and
  33. 1:22you'll know that freezers need de-icing
  34. 1:23all of that ice all of that buildup has
  35. 1:25come from the air now how does that
  36. 1:27affect coffee well in an ideal world we
  37. 1:31could put coffee in our freezer and it
  38. 1:32would slow down the scaling and that
  39. 1:34would be great what we want to do
  40. 1:36however is really limit the interaction
  41. 1:40between the coffee beans that are now
  42. 1:41minus 20 degrees Celsius and and any
  43. 1:44kind of air or you don't want to do is
  44. 1:46this you don't wanna go buy a big kilo
  45. 1:50bag and put the whole bag in the freezer
  46. 1:52and then every morning
  47. 1:55get the bag out get your coffee out put
  48. 1:58the bag back in the freezer because all
  49. 2:00you're gonna do is introduce lots of
  50. 2:01fresh humid air into those beans you can
  51. 2:04get crystallization of ice on that
  52. 2:06coffee that's just bad in every single
  53. 2:08way possible so here's your best
  54. 2:11practice if you've bought a kilo of
  55. 2:13coffee if you've bought a couple pounds
  56. 2:14three five if you've bought more coffee
  57. 2:16than you need in the next week or two
  58. 2:18then what you want to do is parsley out
  59. 2:21into one to two week sort of quantities
  60. 2:23then freeze those right you want to get
  61. 2:26rid of as much air in whatever you're
  62. 2:28freezing in as possible ideally now some
  63. 2:32people go as far as vacuum packing it
  64. 2:34that's a little extreme and I'm a little
  65. 2:36uncomfortable with the amount of wastage
  66. 2:38that comes from that there are certain
  67. 2:40things that require a vacuum packaging
  68. 2:41and I'm okay with that but I think
  69. 2:43vacuum packaging coffee just the waste
  70. 2:46is a little bit look for me but it is
  71. 2:49probably the best possible way to do it
  72. 2:51but I wouldn't go so far as to vacuum
  73. 2:53seal individual portions unless you had
  74. 2:56a coffee that was incredibly expensive
  75. 2:57and you were running a very very very
  76. 2:59cold freezer sir you've bought that kilo
  77. 3:02you want a parcel out to say 250 gram
  78. 3:05300 gram 350 gram whatever you prefer in
  79. 3:09in to those kind of parcels you can use
  80. 3:12freezer approved sort of mason jars if
  81. 3:14you want to do that you could obviously
  82. 3:15use freezer bags if you want to those
  83. 3:17things are reusable and that thing is
  84. 3:18good or you can just buy three or four
  85. 3:21individual normal sized retail bags and
  86. 3:23put all but one in the freezer and then
  87. 3:26what you want to do is is take out a
  88. 3:28portion the night before you need it do
  89. 3:30not open it and let it defrost overnight
  90. 3:33little do you find just on the counter
  91. 3:35overnight you don't want to open it when
  92. 3:37the beans are that cold because you will
  93. 3:38get some condensation forming on them
  94. 3:40and broadly speaking that's just not
  95. 3:42particularly good for coffee you don't
  96. 3:43really want to do that if you've just
  97. 3:44bought a regular-sized retail bag it's
  98. 3:46just not worth you freezing that it's
  99. 3:49not just just use it over the next
  100. 3:51couple of weeks and you'll be completely
  101. 3:52fine you're not gonna do much to really
  102. 3:54change the state of that coffee if the
  103. 3:57coffee is stale out-of-date to begin
  104. 3:59with there's no point freezing it
  105. 4:02nothing good will happen there nothing
  106. 4:04bad will happen but nothing good will
  107. 4:05happen so why bother
  108. 4:07in summary if you've got more fresh
  109. 4:09roasted coffee than you need in the next
  110. 4:11couple of weeks take the excess and
  111. 4:13portion it into one to two week portions
  112. 4:15seal them air tight get rid of as much
  113. 4:18as you can and freeze them and then the
  114. 4:20night before you need a portion take it
  115. 4:22out of the freezer let it defrost sealed
  116. 4:24on the counter the next morning grind
