  1. 0:05and that [ __ ] you these handouts to
  2. 0:07start off I do it's not English anybody
  3. 0:10means one thing that let us say there is
  4. 0:22a diversion if you need it right today
  5. 0:31I'm going to talk to you about a subject
  6. 0:34it's very close to my heart
  7. 0:36traditional beer making first of all
  8. 0:42then just get through a few and health
  9. 0:46and safety issues everybody where the
  10. 0:48fire exit it straight out of there and
  11. 0:51the toilets to the right and we will be
  12. 0:54handling some chemicals and some yeast
  13. 0:56today if you do have any allergies
  14. 1:03please let me know and don't handle it
  15. 1:09okay the learning objective today is to
  16. 1:12call the four steps of traditional beer
  17. 1:15making the difference between
  18. 1:19traditional really managing and
  19. 1:24commercial beer making some traditional
  20. 1:26beer making recently you can do at home
  21. 1:28using more ingredients and do any of you
  22. 1:32or happen if you've ever made beer at
  23. 1:35home
  24. 1:38[Laughter]
  25. 2:05this is slightly different because it
  26. 2:07will be even more intense it's just an
  27. 2:09overview of how you would use
  28. 2:10ingredients right the four steps is
  29. 2:16quite straightforward process of 20 be a
  30. 2:27good it's a it's a very straightforward
  31. 2:30very natural process first step of
  32. 2:36traditional big monkey is to make sure
  33. 2:39that you sterilize all your equipment
  34. 2:45sterilizing the equipment can be carried
  35. 2:48out using all sorts of different
  36. 2:49chemicals I don't know what you've used
  37. 2:51in the past did you bother sterilizing
  38. 2:54because we made to be here
  39. 3:04it was also built in yeah because there
  40. 3:08for me so the main chemicals you can use
  41. 3:11to sterilize equipment
  42. 3:13some people use bleach directed to very
  43. 3:20thin dilutions say that can kill all the
  44. 3:23germs some people use this stuff sodium
  45. 3:27metabisulfite a few dots and that's
  46. 3:30basically a white powder that you mix
  47. 3:32with water to a particular ratio and
  48. 3:35then you can use that to sterilize all
  49. 3:38your equipment so do you matter by
  50. 3:48bisulfate once it's in the solution you
  51. 3:50can reuse this so it's quite economical
  52. 3:52to use that's why I use that rather than
  53. 3:55things like the condom tablets which are
  54. 3:58quite expensive but basically make the
  55. 4:00same stuff once you sterilized your
  56. 4:10equipment the next step of the second
  57. 4:13step is to make what I call a beer soup
  58. 4:15so traditional beer making is very much
  59. 4:18like making soup and it's same principle
  60. 4:22and you get your ingredients then pop
  61. 4:27them in its boiling water and basically
  62. 4:28simmer for 15 minutes
  63. 4:30and the sort of ingredients that you
  64. 4:34would use in traditional bit making
  65. 4:35would be mold I've got two different
  66. 4:39source more to where you would use two
  67. 4:41different the two different types
  68. 4:44powdered malt and they've got what's
  69. 4:49called craft malt and hops
  70. 5:18which is the second use as much as you
  71. 6:24can give you an idea what sort of being
  72. 6:26in juice a very dark
  73. 6:31new staff dismissed out yes ran out
  74. 6:34that's right though chocolate mortis
  75. 6:36what comes in all sorts of different
  76. 6:38colors basically and the color is
  77. 6:39derived from the length of time at
  78. 6:41amenities gross roasted when it's
  79. 6:43processed the darker want a much
  80. 6:45stronger vein of no stronger smell and
  81. 6:50so the darker to be used to create a
  82. 6:52spout or a a dark rail the lighter malts
  83. 6:57you do something like a lager or so we
  84. 7:02do is we pop your ingredients as the
  85. 7:06same but poppin into boiling water and
  86. 7:08simmer for 15 minutes just like you
  87. 7:10would make soup you can experiment by
  88. 7:13adding all sorts of other ingredients if
  89. 7:14you wants to add fruit juice you can
  90. 7:17make for example if you added apple
  91. 7:18juice you can make an apple a or all
  92. 7:21sorts of things the world just like any
  93. 7:23soup the world is your is your oyster
  94. 7:27you can just about anything you like
  95. 7:28herbs now find sugar honey even and
  96. 7:32honey's a good one it's a very soft
  97. 7:34Plata to inspect 3 so after you make a
  98. 7:40pea soup which is technically known word
  99. 7:45you want to actually ferment the word
  100. 7:52you created to create beer fermentation
  101. 7:55is the process whereby East turns sugar
  102. 7:59to alcohol it's perfectly natural
  103. 8:01process it's what East doesn't actually
  104. 8:05it's almost as though you know it's the
  105. 8:07yeast purpose in life is to produce
  106. 8:10Jesus alcohol its byproducts it also
  107. 8:13creates carbon dioxide fermentation is
  108. 8:18care about me something like this this
  109. 8:20is quite a small little bucket but you
  110. 8:24several batches of beer with these sorts
  111. 8:27of buckets some people call them brew
  112. 8:32pot some people call them commenter's
  113. 8:34but basically it's a food-grade plastic
  114. 8:36bucket with a lid on the top you
  115. 8:42basically let you all work cool and
  116. 8:45direct your yeast and then you leave it
  117. 8:47the 17 cents 10 days so different cones
  118. 8:55at least I've got here
  119. 8:57they dried yeast but you can also buy
  120. 9:01live yeast which is cheese actually
  121. 9:07slightly sloppy cheese the dried yeast
  122. 9:11is fine and somebody's actually agrees
  123. 9:13what the wireless resistor in the air
  124. 9:15around us and some of the more esoteric
  125. 9:18beers from Belgium all step after
  126. 9:28fermentation basically created your beer
  127. 9:33into this fermentation it's ready to go
  128. 9:37you need to bottle it what clean first
  129. 9:45of all you would need to do is to prime
  130. 9:47the beer so you want about a bit of
  131. 9:50sparkle to your beer and to do that you
  132. 9:52would take a small sample of beer mount
  133. 9:55some water to it
  134. 9:58just find a bit more sugar in in juices
  135. 10:00into the fermentation in the bottle so
  136. 10:03you get a bit of sparkle and then your
  137. 10:09bottle you'll be using special box also
  138. 10:13anybody think of the reason why you need
  139. 10:15to use
  140. 10:19[Music]
  141. 10:25Seenu yeah so is it Benjamin steelsuit
  142. 10:29yeah
  143. 10:30so you need it was John factor safety
  144. 10:32reads is you always need to use good
  145. 10:34strong waffles a lot of people use
  146. 10:38plastic bottles because they just don't
  147. 10:40explode if you get special homebrew
  148. 10:43bottles there's the best option right
  149. 11:16this is little list through the basic
  150. 11:19principles of beer making basically just
  151. 11:23to remind you the four basic steps of
  152. 11:25their 19th first step sterilize second
  153. 11:29step to make your BSC third step ferment
  154. 11:33you're here and then the fourth step and
  155. 11:36what could you be able to pop it away
  156. 11:37and then we'll be ready in a couple of
  157. 11:38weeks to drink with your friends so
  158. 11:53making traditional beer is really simple
  159. 11:56I don't need that much room to do it
  160. 11:59this I mean basically this is all you
  161. 12:01need to create some really good taste
  162. 12:08there are lots of online resources in a
  163. 12:11gallon we're not such a source if you
  164. 12:13want to take this further right up I
  165. 12:17think if you just do a quick quiz before
  166. 12:19I finish and what I'd like to do is just
  167. 12:21go around the room and see if you can be
  168. 12:25caught I thought Kenny might be involved
  169. 12:26in this bit and it's fine
  170. 12:30so Susan tequila call first
  171. 12:33step in traditional Averys correct quota
  172. 12:39and Mundi second step making soup
  173. 12:45brilliant yeah that's basically it's a
  174. 13:06very simple process
  175. 13:13anybody have any questions any kind of
  176. 13:28beer that you want you wouldn't put in
  177. 13:31bearing the mask this stuff so if you
  178. 13:34look online there all sorts of recipes
  179. 13:35or varying strengths so wooden tree rock
  180. 13:41standard kind of bitter tasty bits are
  181. 13:43probably happen instantly grams of this
  182. 13:56you can ask you about something like
  183. 13:58honey you're introducing more sugar
  184. 14:09where fermentation was stopped because
  185. 14:10they know this sugar stops they suddenly
  186. 14:15yeast has being destroyed no sugar
  187. 14:17yeah fermentation stops yeah then you
  188. 14:19just I think that's extending it vent
  189. 14:21again when the yeast is Sammy this we've
  190. 14:24got thrilled with all the sugar Italy in
  191. 14:26the fermentation
  192. 14:29then it starts to become inactive
  193. 14:33doesn't reduce carbon dioxide so that
  194. 14:36vid on your from them to when you so
  195. 14:40that's what you know where your
  196. 14:42mentorship
